Crockpot Chicken Fajitas

I really have to start this post by thanking my boss for this recipe. I was a little skeptical about it since I'm not big on these types of foods. (I'm a meat and potatoes kind of girl) But I told my husband about it and OF COURSE he was all for making it. And we had literally just bought our crockpot that day. So he was a eager beaver to use it! So after an hour in the grocery store and 4 hours marinating in the crockpot, we had a pretty delicious dish, if I do say so myself! Well enough of my blabbering, let me share this amazing dish with y'all!

Ingredients :
We used boneless skinless chicken thighs. (You really don't need that many, just enough to cover the bottom of the crockpot) 4 max I would say

green pepper
red pepper
onion
( we used a prepackaged pepper and onion mix from Walmart as you will see in the following picture)

Optional spices and herbs:
we used a bit of salt, pepper, and garlic powder along with cilantro (just a bit)

and of course to top it all off a large jar of Pace mild salsa.
 All the ingredients that you will need to top your chicken!
 Optional on the salt, pepper, and cilantro. But as you can tell the chicken is in an even layer on the bottom of the crockpot.
 Now throw it all together on top of the chicken. Already looks heavenly.
 Top it off with your jar of salsa. Add the lid and cook on high for 4 hours or low for 8 hours. Once cooked you will want to shred the chicken with forks. Then enjoy!
